Advice for Senior Pictures?

In a few days, I'm going to make an attempt at taking some senior pictures of my grandson. I'll be using either my Tamron 17-50 2.8 mostly in the 50mm range, or the Canon 50 1.4 lens. I really feel that the benefits of the zoom's FL out do any benefits of the 50mm primes faster aperture; as all shots will be taken outdoors. Weather is expected to be sunny, 75, and a 10 mph wind. Based on these facts, what might you advise as maybe some camera and lens settings at which to begin? I shoot with a Canon T1i. Unfortunately, I will have only the camera's LCD and maybe histogram to give me any feedback during the shoot. Once finished, I'll have what I have. No second chance, and no way to preview on a computer until it's too late.

Any and all suggestions are needed. I know that I can change and tweek the settings as things move along. I just want a suggested starting point.....or.....a setting formula that is likely to stand a good chance of producing decent results based on what I know now. Thanks.
