As I see it, you should either go full-frame or micro Four Thirds. APS would not make sense. I trust you will have a blast with a D700 and some good glass.

There does seem to be something special about full-frame, though it may just be that the people who typically have them tend to be better photographers. They also tend to have good glass. You don't often see a full-frame DSLR mated with a kit lens. There is also the issue of DOF. It is easier to get that nice blur with a full-frame.
