Open your Pages document then: File/Revert to/Last Version or Browse all Versions.

Apple has all your old versions covered in case you make a mistake and save changes that you wish you had not. It also is nice to know if you are working for a while on a document and have a power failure that the document is saved.

Just because it works differently is not a reason to dislike the way it works. You can also simply duplicate and save if you want another separate version. It is a relatively simple matter to adapt to a better way of document version control. It is automatic so you don't have to manage it manually.

Many people typically dislike change but why not give this some time and see if you don't find it a better solution to versioning.
