Maximising camera's full dynamic range

In DPR's review of Nikon D700's dynamic range in RAW, it shows 2 versions of the same photo to illustrate how much extra highlight detail can be obtained in Adobe Camera RAW with -2.35 EV digital compensation. This is great news but by doing so darkens the rest of the photograph. What is the recommended method used to maximise highlight and shadow detail (the whole dynamic range) in a photograph? If I can nail this I'll probably buy the D700 so looking forward to your reply. Many thanks,
