The camera can only capture a fraction of the colors that a human can see (albeit it's a large range). Also, the human eye is smart and automatically perform color balancing on the fly.

However, camera is dumb, whatever color it captures stays records as that color. To faithfully records the color and avoid color cast problems, the mid-tone grey is used to set as the mid-point of the range when a picture is taken.
