Confusion regarding hyperfocal distance...

One concept that continues to confuse me is hyperfocal distance. My confusion has less to do with the concept and more to do with the application for landscape shots. For instance, if I am shooting with a 28mm lens at f/16, my handy chart tells me to focus on something 5.36 feet from the camera. This may work great if such an object exist at that distance, or if I can move the camera to that object and still retain my composed shot. But what happens if no such object exists at that distance? I often find that landscape scenes seldom lend themselves to the convenient use of hyperfocal distances. Any comments?
