And that is why I use AF-ON for focus, and disable focus on the shutter button.

This means you can set the focus on anything you want, then release the AF-ON button to prevent any further change - no need to set lens to MF as someone mentioned earlier.

Once you have recomposed, the initial half press of the shutter button then just sets the exposure appropriately for the final composition.
