I use the central AF point nearly all the time. But I also recognize that sometimes, it would be more convenient to use other AF points as well.

e.g. everything is well set up on a tripod with a composition that you like and already set the focus on a subject. Then you suddenly want to change the focus at a different object (but still want to maintain the composition). You may be able to do that by just choosing a different AF point without the need to change the camera position and recompose. Unlike handheld, on a tripod, choosing a different AF point is a bit more convenient.
