Racing Car Photos - I got it wrong - but how to do it better?

I shot some racing at Donington Park recently, and the shots are disappointing (see below)

The shots were panned, so I don't want to pre-focus on one piece of road. In one sequence I got 8 shots of the same 3 cars, and the Red Ferrari 512M overtook 3 cars during that sequence - pity it wasn't sharper!

I believe I should have used the TV setting, and set for about 1/1000th

My equipment:

Canon EOS 500D with Canon 70-300mm USM IS

These shots were taken with the lens fully extended.
I used the Sports Mode

What should I have set the AF to, AF1, AF2, or AF OFF ?

Picture Style: STANDARD
AF mode: ONE SHOT
Metering: PARTIAL

I am going to Goodwood, Cholmondeley Pageant of Power, and the Silverstone Classic, and I want some advice of how to set my camera up for 'foolproof' shots, as well as possibly for more technical shots.
