Grow into it

I have not upgraded my workstation yet, so I'm not too happy with the workflow slowdown, but in almost every other way I'm finding the d800 to be an upgrade. I'm getting amazing detail, even after downsampling, and my files just hold up to PP a bit better. On a couple occasions I've also been able to take advantage of the expanded DR, and I do find low-light AF lock slightly better.

I do think that the D700 is wonderful, though, and am still recommending it highly. I don't know if the D600 is going to have the AF you've grown accustomed to, so you may just want to get another D700 if the D800 isn't doing it for you.

However, my best advice would be: grow into it. . In a couple of months or years you may be sad you let the D800 go.
