I always treat the subject and background as two totally different "subjects," lighting each separately. I do most of my work with just two lights, using either speedlights or big White Lightnings. I shoot one light into the background, often with a gel color, and a second light for my subject, sometimes adding a reflector to fill in any bad shadows. You really do not need very much gear to get decent results.

I move the subject pretty far away from the background so the subject light does not desaturate the background. Here's some simple two light setups:
