You can lock in the AF before video in the same way that you would lock in focus in picture mode - set the focus manually, or half-press the shutter and press left on the rear wheel to autofocous and lock that focus in.

I wish it was easier to set the focus distance to infinity at the beginning, but I've done it several times.

If, before you start taking video but in video mode on the top dial, I believe if you press "up" it will lock in the current exposure for the whole video, and let you adjust it brighter or darker.

Downside is that you cannot technically adjust the "exposure compensation" - either you let the camera do it automatically, or you lock it into one setting for the video, you can't just say "-1/3rds but otherwise adjust automatically".
