3880: Matte or Photo Black + workflow?

HI to all:

I am in the process of looking to buy an Epson printer and checking into the 3880 but need to understand the best workflow before I print on large paper (mostly looking into fine art paper category) and trying to avoid ink waste.

Do you print small first (but usually on glossy paper? 4x6 or 5x7) and then large? or go straight to large printing?

How do you soft proof your images before printing large?

I want to minimize the waste of ink switching from Matte to Photo Black (ink used during conversion approx 4.6ml! $$$) and viceversa, so I am very interested in what you recommend!

Any book that maybe you recommend?
