Time lapse at a specific time


I need to take a daily time-lapse sequence of a construction project which will last for many months.

On most (all?) Pro grade Nikon DSLRs I can set a time for the sequence to start and the detail of the time lapse. But the images are stored on the camera card. As the camera will be in an inaccessible location this is not a good solution

If I use Nikon Camera Control Pro 2 - I can have the time-lapse images download to a computer, but cannot set the actual start time.

I have looked at Sofortbild - but it has the same issues as mentioned above with Camera Control Pro

So - does anyone know of a solution - either hardware and/or software?
I would prefer a Macintosh solution - but can use a PC...

I have a D100, D200, D2Xs & D3, but I can get a new camera body if needed, would prefer Nikon as this is what I have life long experience of - but am not averse to other brands for this project.
