Focus points and metering: how often do you mess with them

Focus points and metering: how often do you mess with them

I am interested in pros or people who like street photography's views...

I personally find changing any settings quickly rather awkward on cameras so I generally use Av or M, spot or center weighted metering depending on what I am doing and leave it.

Do people really move the AF point around or trust using all the AF points? Or do most people do the half press and drag?

Technique wise I honestly don't see a lot of other photographers working. Clearly if you are waiting for the critical moment you can pre-expose and pre-focus... Maybe people who are great realize where they will put the person in the frame before they raise the camera to their eye and so move the point around?

As mostly a landscape photographer these are not my practice points, where generally it is M mode take picture look at histogram repeat.
