After just one day Olympus support (Germany) answered my query telling me that both the fraying and desaturation are most likely related to noise-filtering that that noise-filtering can be turned off. So that's the official stance for the time being.

I do know that aggressive color noise filtering can lead to serious desaturation (try it yourself in Lightroom for example). Someone already said, though, that noise-filtering will still happen at high ISO even when it's turned off via preferences?!
