I don't have any experience with the cameras you mentioned. Where did you hear that "Olympus has beautiful IQ but mostly post processed for distortion and vignetting"?
I would say the best thing to do, is to study your options, read the reviews, and then just dive in. There's nothing better than practical experience. You don't have to spend a lot on your first entry...just get started with a minimal amount of gear...then expand at that point or change your mind and get something else. That's what a lot of us do.
