but a pro camera SYSTEM might have redundant cheap cameras

Of course no professional wants their camera to fail in the middle of a job. But professionals don't want to drop, lose or have cameras stolen, either, and those things happen all the time. Redundancy is called for on assignment whatever the component quality. As long as a camera is not toy-like in reliability, a system with fail-over redundancy capability (in computers as well as camera systems) can have professional-level dependability even though no particular component is bulletproof. Would rather have 2 cheap bodies on a job, that will throw away every year or two, than one tank-like heirloom.
