Professional cinematographers manually focus, so they have control over what they want to focus on. It's very rare that they use auto focus. Operating the 7D is more like using a high end Hollywood movie camera, then a cheap consumer video camera. It does take practice.

To judge the focus properly you ideally need to use an LCD viewfinder, a magnifying loop that attaches to the 7D's LCD screen. I use the LCDVF. Some even use an external monitor, like the Lilliput Monitor (attached to the HDMI out).
