Both the lowest end Mac Mini, and the Mini Server have the Intel 3000 shared memory graphics processor. One shares about 284 mbytes of memory, and the other shares 384 mbytes of memory. The Server has a 2.0 ghz processor, but it is the i7 quad core processor. The mid level Mac Mini has a 2.5 ghz processor but it is the dual core i5 processor, but it actually has a dedicated GPU (AMD 6630m) graphics card with 256 mbytes of dedicated RAM. Apparently the maximum ram that any of these can handle is 8 gbytes.

Lightroom does not depend on the GPU at all. Memory and processor drive most of what it does. Photoshop does hit the GPU occasionally, but not for much. But the upcoming CS6 will use it a lot more. I think most graphics software in the future will begin offloading tasks to the GPU.
