Another option is to use pseudo-HDR aka tone-mapping.

Used judiciously, AutoHDR ( http://www.autohdr.co.uk/ ) does a very nice job (w/ just a single image; you do not need multiple exposures of the same shot) of punching up a picture. You can see examples on the AutoHDR page
