I think the exposure on your previous day was not bad. Maybe backing off -.3 or .5 EV. That takes a little edge off the snow and clipping in the clouds.

Your second attempt appears more pleasing due to the weather change and clearing out of clouds. However, it is a different lighting situation than the previous day. This time around it is underexposed giving it a dingy look.

I wouldn't just dial in -2 or -1.3 etc as a rule. You can meter the highlights that you want to preserve by sampling through the sweep. From that you can make a decision on the best overall exposure. For me sometimes that results in underexposed foregrounds which I have to raise a bit in post. Alternatively you can merge files to increase the dynamic range.
