Why do I have to adjust contrast, almost always?

I have this long standing observation about my photos. Whenever I download photos to my computer (no matter what camera - DSLR or P&S), I have to almost always adjust (increase) the contrast to make colors look better. Otherwise photos look hazy. Why? This issue is very common for me especially in Landscape/Nature photos where there are lot of natural colors. When I look at the histogram, most of the pictures are not under/over exposed. What am I doing wrong?

Other question I have is, what settings in a camera controls the contrast? The only thing I can think of is the Exposure compensation (+ - ev) or may be saturation. Otherwise we can only do this via haze filter or a CP? I have attached 2 basic pictures that I took today. One is no adjustments and the other one has heightened contrast. Can anybody explain.
