How much have DSLRs improved?

I am a 350d owner, it is was my first D-SLR and I have been very happy with it. It has allowed me to take some really special photos, and being of the opinion that better technique or a more suitable lense are going to get me better photos than a better camera I have never really seen the need to upgrade. However after one too many perfectly good photos was ruined by my camera's apparent decision to guess the correct exposure I am now considering upgrading.

So how far have D-SLRs come since the 350D? I am aware that the sensors and signal processing circuits are much improved but what about the auto-focus and the exposure metering? The prospect of really good video is also exciting.

In short if I upgrade to a 600D or even a 7D am I going to go say "wow the improvements blow my mind I can't believe I didn't consider this earlier!" or "Yeah I get more flexibility and the body is better built but I can see why I waited"?

Anyway I look forward to some helpful comments!

I had posted this into canon talk but was advised that it was not the best place, so I reposted here.
