Tymvest and Doug gave you some good advice. In addition I'd like to add that the 75-300mm and 350D combo is very slow focusing, esp. in low light. It may hunt a lot and miss focus completely depending on how dim the lighting is. If you can I'd test this out in another match before the shoot.

As Tymvest said use a tripod, that'll make all the difference in getting good shots even at lower shutter speeds like 1/200. You'll get some subject blur though. Also pay attention to the lighting. Your eyes may not be able to detect it, the color of the lighting may shift very rapidly. When shooting at shutter speeds of 1/400 and higher the WB may shift from top to bottom of the image (very hard to fix) or you get inconsistent WB from shot to shot (which isn't too bad). So you may be stuck at a slower speed anyway.

Shooting raw would be best but as Doug said the buffer fills up after 3-5 shots.

If this is a paid shoot I'd decline or rent a better camera system like a 7D + 70-200mm f/2.8L IS USM. You'll gain a tremendous advantage in buffer depth (17-20 raw shots), focus speed, AF accuracy in low light (center AF point is f/2.8 sensitive), IS, 2 stops faster lens, much higher iso capability etc. The 350D can do only 1600 iso, beyond that you need to underexpose which is only advisable when shooting raw.
