Well, first, the 5D and D700 are not competitors because one is designed for studio and landscape, and the other with the pro-grade performance for more general use. Need drives the purchase, and the specs of these two are far too different to make them real competitors, except perhaps for people who view then as simply entry FF in Canon or Nikon's line up. But if those people listed out what they need, then knew enough to match the features, they would be led to one or the other, any rarely end up at "either one will do".

The size of files created by a 36 MP camera will, unless I'm missing something, result in slower performance: slower FPS and bursts. This will not be an action camera. Processing those hugh files will require more than the average computing power. It would be an excellent landscape and studio camera, but not so good for sports, action, etc. You'll need the best glass to get the most out of this, as well as possess very good skills over all because this will not be a forgiving camera to use. The same rumors have this priced way above the D700 original retail.

All this points to a more limited target shooter for these specs compared to the D700's broad appeal: someone with more specific needs who is willing to invest more in not only the body, but in lenses, computing hardware, etc.
