I'm about to purchase a new 13" MBP. If I switch out the factory hd for a Seagate 500gb 7200rpm hybrid drive and a 8gb ram set from Crucial on my own, will it effect the Apple warranty?

Well, actually it could but it's not a given that it will. In the event that your computer has a failure that is linked to any aftermarket product installed or by an installation error, it possible could void the warranty. Make sure that you keep all factory hardware in the event that you have to return it to Apple.

Assuming that your in the USA you are protected by the Magnuson Act:

Warrantors cannot require that only branded parts be used with the product in order to retain the warranty.[2] This is commonly referred to as the "tie-in sales" provisions[3], and is frequently mentioned in the context of third-party computer parts, such as memory and hard drives.
