I process my photos to B&W using Photoshop CS3. Adding contrast is done after the B&W conversion usually and I use Photoshops 'curves' tool - I add it selectively, so some parts of the photo get more contrast than others.

Typically in landscapes the foreground will get more contrast than the background which helps in maintaining a sense of depth but essentially I just use my own judgement and add the contrast by eye, treating each photo on its own merits.

Well, you do a fine job. I seldom see a convincing digital B&W but these are very good. Dont be too shy of shadows and contrast is what I keep trying to tell myself.
