All depends on the camera's buffer. Some cameras come with hefty buffers that can handle 20 RAW files in a burst, and offload to a card at a slower rate without affecting burst performance for most users (since most people shoot 5-10 frames at a time in shorter bursts). Other cameras' buffers are very small, and in RAW you could start seeing a slowdown in frame rate after just a handful of frames. If you're shooting in JPEG, then you'll likely as not never really need the faster cards, if you're not using video and not firing off 40+ frames at 6fps all at once.
