RAID 0 will speed up performance for some applications and so will more memory. With Photoshop which still depends upon a scratch disc it makes more sense to have more RAM and use a dedicated internal drive for the scratch disc.

How much memory depends upon the OS level (32 or 64 bit) and the application (PS vs Premier, etc.) and the task (editing large files or batch processing).

RAID zero means double the risk of a primary hard drive failure so it becomes more important to maintain backup images. Where RAID is useful is for an external data storage device so that you can have 4 drives and if 1 drive fails all your data is intact.
