Want to use AF-on button but confused

Hi all

when I had a Pentak K20 I had set the equivalent of the AF-on button (under your thumb, back of the camera) to start AF, and I'd like to do the same with my Canon's, but I never know the difference between 1 and 3 settings in that custom function. I think one of them locks the exposure at the focus point, and the other not, but I could never understand exactly how it works.

Woud anyone be so kind as to enlighten me ?? I focus/recompose nearly all the time (I'm a great believer of the rule of third AND of center focus point only, since it's the only one Canon seems to get right other than on 1 series bodies, lol), and I'd like the metering to be linked to my focus point as it is my subject and needs proper exposure.
