Obviously a simplified description, addressed to a general public. Which key modification is made to the data from RAW to JPEG or TIFF, and is not mentioned in that line, most likely because more readers would not know what it is?

While I agree with you that the wording could be more accurate, the facts remains that RAW data is data from the whole sensor assembly (including associated electronics), prior to any modification.
