7D Exposure Problems with Evaluative Metering

I'm having problems with my 7D, and was hoping someone could clue me into what I'm doing wrong (or if there's something wrong with my camera). I've done a lot of aviation photography, and have always gotten nice, consistent results with the 20D, 40D, and 1D Mark III with evaluative metering. When I shot this weekend, my exposures in the same series of photos were all over the board. I was shooting in Shutter Priority, with Auto Lighting Optimizer disabled (it doesn't matter since I only shoot RAW), no exposure compensation, and using the Canon 100-400mm f/4.5-5.6 L IS lens.

Here's two samples (all of these are straight out of the camera with no edits):

Top left: 1/800, f7.1
Top right: 1/800, f9.0
Bottom left: 1/800, f8.0
Bottom right: 1/800, f8.0

Top left: 1/800, f11.0
Top right: 1/800, f8.0
Bottom: 1/800, f11.0

Does anyone have any ideas? I've looked around, and can't seem to find anyone else with the same issue.
