Keep in mind, though, if you are starting with a JPEG - and change the setting in-camera, you are compromising the image quality (i.e. once a JPEG, every action is to some extent "destructive"). If you plan to change your mind based on the conditions, it is best to include RAW in the original shot, and output in-camera to the mode that looks best.

To the extent that you can adjust the display to an ideal (almost calibrated) setting on the K20D, this can be a fairly workable solution to achieve the best-quality JPEG output on the fly.
