D90 - Tips for shooting during African Safari

Hi Guys

My son and I are doing an African Safari in Kenya and Rwanda (mountain gorillas) in a few weeks and as we are both new to the world of DSLR I am after some tips and tricks regarding the best settings etc to ensure that providing we focus and frame correctly, we are guaranteed to get good shots.

We both have the same kit:

50 1.8
18 - 55 VR
55-200 VR
80 - 400 VR

I am interested in what is the suggested settings for Focus and exposure metering etc especially related to dark skin animals such as gorillas and also photographing the african locals.

Any comments will be very much appreciated.
