Need some advice on balancing the flash and ambient light

Hi everyone,

I'm attending a birthday dinner at a dimly lit restuarant this weekend, and I'm the token photographer of the group. I've been to the restuarant before. My concern is that I won't be able to bounce off my strobe off the ceiling cause it's quite high, and it's a unique tin pressd ceiling. Not a nicely flat white ceiling.

I have a Fujifilm S5 Pro.

I think my primes (50mm f/1.8 and the 90mm f/2.8) are too long to be used that night.
So I'm stuck with my sigma 18-200mm.
I also have a SB-600.

I want to be able to capture the shots in relatively low ISO (keeping it below 400?), using the strobe and balancing it so that I maintain that warm ambient lighting.

How should I approach this situation?
