Focus Help with Toddler

I was wondering if someone could help me with focus issues that I get with my toddler every now and then.

I seem to not be able to get the eyes quite as sharp as it should be from time to time. I was about 3-5 ft. away and the top AF point was positioned on her nose.

I know everyone says to aim at the eyes but it is very hard to do with a moving child.

I have seen photos like this that are much sharper in image quality.

I am using a Canon XSi with a Tamron 28-75mm XR Di lens which is very capable of doing much better than what I have achieved on this shot.

EXIF Data:

ISO 100
Aperture f5.6
Shutter 1/250
57mm focal length
AF one shot with Center point selected

100% Crop:

I would like to thank all of you help me try to resolve this frustrating issue!
