If you don't read your in-camera histogram to check exposure then
it really doesn't matter to use UniWB.

Sometimes it does matter, because UniWB allows to avoid overflow problems that happen in raw converters. And of course it matters a lot if you are using colour filters to compensate for lights. With UniWB it is much easier to know what filters are needed.

The whole shooting process becomes more consistent when you use UniWB.
