Ballhead for GT2531LVL with D700 + 14-24 2.8

Hello, I have been reading near one hundred of threads in several photography forums and I still haven't decided what ballhead I should buy.

I just bought a Gitzo 2531LVL, that I plan to use for one-day trekking (between 10 and 20 miles). Nowadays the bigest/heaviest lens I'm going to use is a Nikkor 14-24mm 2.8 or a Sigma 150mm 2.8 Macro with a Nikon D700.

I also have a Canon 100-400 with a 30D, and in the future I would like to use a Wimberley Sidekick with a Nikkor 80-400 (If someday there is a AFS version) or maybe a Nikkor 300 2.8 VR, so the ballhead needs to suport that size/weight occasionally (I think that the tripod legs shouldn't be a problem, although a Gitzo 2530S is better, but too big/heavy for trekking).

I had almost choosen the RRS BH-40 LRII, but it seems that:

a) The ballhead is too small for a sidekick + 300 2.8 VR, and some people consider that also for a 14-24 + D700.
b) The lever quick release is not recommended for a sidekick.

c) For the price, it is much better to get a RRS BH-55 (but I think is too big for my tripod, for trekking, and probably overkill for my needs)

Any advise about the RRS BH-40, the quick release system, the plates, ...?
