AEB settings for HDR

Hi

I was reading through my 1D mark 3 manual, it states that you can take 3 shots with the AEB. I was under the impression that it was possible to take up to seven with 1D series cameras. I'm trying to get into HDR and three exposures doesn't seem to cover a lot of the image types I want to try. Have I made a mistake or can anyone tell me how to get make more exposures without manually ajusting the exposure compensation?

Also could I have your comments on the CS4 publication by Deke McClelland, "One on One", or could anybody suggest an alterative. I've been using Photoshop for years, but want to get more out of it.
