Thanks to everyone for their replies, this is all very helpful.

I won't be taking too many equestrian shots at the moment as I am
unable to ride these days. Hopefully some day in the future again,
but I won't worry about that right now. So, a few questions.....

Do you think I would miss the gap between 55 and 70 if I were to bump
up to the 70-300, or is this something I wouldn't really notice?

IMO, no.

For post processing, I have Photoshop Elements and Picasa on my
current computer already, I have used both for minor touch ups on
images from my P&S. I do enjoy that aspect of photography, but have
never used CS3 (or other version) so I have no idea of what it is
capable of, nor how to use it! It is a rather expensive investment,
one I cannot make right now, but is this something that I am going to
need in the future?

The obvious answer is "yes, of course". However, define "the future". 5yrs, 10 yrs? I have Photoshop Elements 2.0, 6.0, Photoshop CS2, Lightroom, Picasa, Faststone's Image Viewer/Editor, Gimp,..... anyway, I use Elements 6.0 98% of the time, If I get feeling like I just want to play, I'll open up CS2 and mess around with Curves, but for what I do now, and what I'll be doing 5 yrs from now, Elements will work fine for me. I am planning on picking up Capture NX sometime next year though.

A few mentioned a memory card reader. This is something you just
plug into the computer to eliminate the step of connecting the camera
itself?

Yes, unfortunately the cheapest part of any camera is that stupid cover over the USB ports, so I don't recommend using the camera to download, personal preference.

Is that really necessary?
I am assuming it offers an advantage or it wouldn't have been suggested.

In general, pluging in a fast card into a memory card reader that is plugged into the USB 2.0 connection on you computer can decrease the time it takes for you to download the images off of your memory card; Which is a good thing.
