It is held as metadata in the DNG itself.

DNG identifies about 20 or more tags which provide metadata for the sensor configuration and colour balance, etc.

If the DNG is created by a DNG converter, (there are several of these, most supplied by people or companies other than Adobe), then that converter must know the details of the camera model, and it is then able to insert those tags, so that the raw converter that reads the DNG file can get its information there instead of needing its own built-in knowledge of the camera model.

If the DNG comes from the camera, (niche manufacturers typically use DNG, as do some minority manufacturers), then it is easy for the camera itself to insert the metadata.
