Correct. But so many of Nikon's default choices are "off" that you still won't see what the camera really does unless you combine all those. In particular, try Neutral, Sharp +5, Contrast -1 at a minimum to get a better starting place for most outdoor images. Also note that proper white balance intersects this, too.
