How does one take a l-o-n-g exposure?

Please excuse the question, since I am sure it must seem trivial to most of you here. Just remember my previous 4 cameras (over 15 years) have been point-and-shoot and I am still enjoying learning how to use the D300.

For example, doing star trails ...

I'm guessing

a. Use tripod (or other firm support)
b. Choose aperture setting
c. ???

If you are looking at an exposure of many 10s of seconds, does it matter if you put mirror up?
