Poppies would be tough for the camera to avoid blowing out the red channel. What I think is happening is that the color inside the flower is reinforced by the reflected light from the petals. Therefore, the red is of the poppy brighter than that which would be produced from a pure white, flat object. You really have no choice but to reduce exposure at capture, if you want to maintain the true saturation of the flower.
