What is a good backup utility?

Ok, your an Acronis user, and you do the massive backup deal which does not answer my question. I don't want to because it makes it too hard to find stuff that is backed up. I need a compact source for old stuff.

When I read the Acronis user manual, it hardle has anything on back-up. So do they have the options I want which is:

Back up single folders without compression or other nonsense so that humans can read them?

Back up only stuff that has changed, and over write the others without cluttering up the drive with useless older versions?
