What is a good backup utility?

Here is what I want it to do. I want to be able to schedule weekly back-ups to my external HD. I want it to simply copy folders using the same name and folder structure as my primary. It should not create multiple versions, but simply overwrite the old if it is changed and ignore it if there is no change.

I want to be able to go to the external drive and open my file just as if it were on the primary drive. Otherwise I don't want a compressed file or a file in a special place or that requires me to use a special utility to navigate to it and open it.

I want to pick and choose what is backed up. Only a few things need to be backed up, not the entire drive.

Finally, this is not a system restore back-up; I will use something else for that.

Is the built in Vista back-up utility any good?
