It's not fascination, it's practicality.

An EVF lets you see what the sensor 'sees' to check exposure, white balance and most importantly dynamic range issues of highlight clipping and/or shadow black-out. All this with a histogram (and other useful information) superimposed if you so desire.

You may trust your DSLR with optical viewfinder to take care of all of this for you for the advantage of a clear view of the subect for accurate focus and depth of field. However, I would rather have control over exposure parameters as I have a fair idea of what my depth of focus is anyway when I use Aperture priority mode.
