I believe the "softness" you refer is related with the lens they used to give that effect and "probably" nothing to do with sensor.

The lens used is a 135 STF and I don't know the condition used for taking that photo but @5.6 gives that kind of softness to the oof areas.
Check the plants at the outside window in 100%, do you see what I mean ?
