Basically by underexposing you are effectively throwing data away i.e. you are turning your 12mega pixel camera into a 2 or 3 megapixel camera. See this link from LL on the subject to understand why you should always expose to the right of the histogram (without blowing highlights that matter.)

I'm assuming of course that you are shooting in RAW.....
